Seared Tilapia on Kuma Pellet Grill

What is a pizza steel you might ask?

It is a seasoned steel baking plate much like a cast iron pan.  The pizza steel on a Kuma pellet grill will produce a fantastic pizza crust by absorbing and evenly distributing heat to your homemade pizza crust.  But pizza is just the beginning of what you can use the Kuma Pizza steel for on your pellet grill.  Check out the pizza steel here

So why would you cook fish on it?

Tilapia is a mild and delicate fish that is great for using in fish tacos or just seasoned and grilled up next to your favorite vegatable.  The downside to grilling tilapia is that is will easily flake and begin to fall apart on the grill.  Enter the pizza steel, pre-heat your pizza steel for 30-40 minutes on the Kuma Pellet grill or any other grill for that matter.  With a lightly oiled steel you can put a nice sear on your fish without the risk of your filet "falling through the cracks".  Cook at 480° for about 5 minutes on each side until the internal temperature of the filet is 140°.

Serve on steamed corn tortillas with fresh pico de gallo, spinach and your favorite cheese.
